Our Edgewater Home: Where Tradition Meets Community
Since late 2019, Konjo’s Edgewater restaurant has been the heart of our journey—and yours.
When Fetien and Yoseph added onto the food truck with a permanent location in Edgewater, they envisioned a cozy place where neighbors, families, and friends could connect over shared platters. Converting a vacant commercial building into a warm and inviting space for multiple restaurants required months of planning and sourcing authentic Ethiopian spices from their families back home in Ethiopia. Today, our Edgewater space embodies that effort: a vibrant hub where laughter mingles with the aroma of Berbere spice and fresh Injera.
First Fast-Casual Ethiopian in West Denver
As Colorado’s first fast-casual Ethiopian concept, Konjo brought Ethiopian cuisine to Edgewater Public Market, filling a unique niche on Denver’s West side (Edgewater Public Market).
Awarded Best Ethiopian
Since opening, Konjo earned Westword’s Best Ethiopian Restaurant (2021 - 2025) and helped Edgewater Public Market secure Best Food Hall accolades for three straight years (Westword, Westword, Instagram).
Menu Highlights
Guest favorites: Vibrant Vegan Combos of spiced lentils and veggies, locally sourced Beef, Chicken, or Lamb Tibs, and festive Doro Wot, all served with Injera.
Vegan Combo: Your selection of Misir Wot (spiced red lentils), Gomen w/ Dinich (seasoned spinach), Kik Alicha (yellow split peas) or Tikel Gomen (curried cabbage).
Tibs: Choice of locally sourced Beef, Chicken or Lamb, sautéed in spices.
Doro Wot (Spicy Chicken Stew): Spicy bone-in chicken stew simmered in Ethiopian seasoning, served with a hard-boiled egg. Made only on holidays and special occasions.
