An Experience full of Beauty
Our Journey
Konjo began as a modest catering company before launching the food truck, with one simple goal: share Ethiopian flavors with our new community. By late 2019, that food truck evolved into Denver’s first fast-casual Ethiopian restaurant on the West side—now a beloved spot in Edgewater Public Market. Today, we’re proud to be expanding into Denver’s downtown Milk Market in June 2025. Through each milestone, we’ve held onto one core belief: great food nurtures community.
Roots in Tradition
Our recipes originate from our mothers’ kitchens passed down through generations. From the slow-cooked spices to the Injera baked fresh daily, each dish tells a story of home.
From Food Truck to Award-Winning Restaurant
In 2015, our food truck introduced Denver to Injera and robust spice blends. Community support quickly transformed that venture into a brick-and-mortar opening in November 2019 inside of Edgewater Public Market. Since then, Konjo has been honored as Best Ethiopian Restaurant by Westword readers from 2021 to 2025 (Westword, Westword), and recognized by 5280 Magazine as a Top of the Town local favorite (5280).

As a proud Black-owned business, our June 2025 expansion into Milk Market reflects our commitment to growth, representation, and serving more communities with authentic Ethiopian hospitality.
